World food consumption and trade in general and dairy products in particular is influenced by a set of factors related to the expected macroeconomic context and the evolution of the world population and its location, as well as policies to support production and marketing in different countries and international negotiations. All of them affect demand, supply and world trade. In Mexico, the production of bovine milk is the third most important activity within the food industry in Mexico, and its growth depends on the availability of the national milk. In Mexico, milk production is developed throughout its territory, but during the period from 2005 to 2010 it was concentrated in four states, which contributed together with 45% of national production in this period (Jalisco, Coahuila, Durango and Chihuahua).
